Milk Pasteurization Process

What are the differences between Pasteurized milk, Ultra Pasteurized milk and Ultra High Temperature milk?

It is the same milk, the only difference is in the pasteurization process and the packaging which impact shelf life.


Pasteurized milk

 

Pasteurized milk is heated at a minimum of 161°F for at least 15 seconds. Milk pasteurized using this method needs to be kept refrigerated at all times; its shelf life ranges from 10 to 21 days.


Ultra Pasteurized milk

 

Ultra Pasteurized milk is heated at 280°F for 2 seconds. This process kills more bacteria than regular pasteurization. Ultra Pasteurized milk requires continual refrigeration and once it is opened, its shelf life ranges from 30 to 90 days.


Ultra High Temperature “UHT” milk

 

Ultra High Temperature “UHT” milk is sometimes referred to as “long life milk.” UHT milk uses the same process as Ultra Pasteurized milk but the difference is that it is packaged in a sterile packaging under aseptic conditions. This helps prevent bacteria from being re-introduced into the milk after it is pasteurized. UHT milk requires no refrigeration until it is opened and it stays fresh longer than any other pasteurized milk, usually lasting more than 6 months unopened.
